The Ilocos Royal Bibingka is one delicacy that Ilocos is proud of and every visitors’ must try. It has a decent packaging, a good shelf-life, and very affordable price which make it very ideal for “pasalubong.” However, it is only in Ilocos Sur (Bantay and Vigan) where you get your Royal Bibingka. This is not your usual ”puffy” bibingka. Instead, the Ilocos Royal Bibingka is a “sticky rice-cake,” closer to fresh “tikoy” in texture.
Royal Bibingka is very popular at Tongson’s Royal Bibingka (The Original) at #8 Florentino St., Vigan City–just a street away from Plaza Burgos.
You can also buy Royal Bibingka at Marsha’s Delicacies and The Sister’s Royal Bibingka which is located along the highway.
Tip: You can chill Royal Bibingka a bit for the texture to get fuller. A freshly baked Bibingka can get sticky which makes it harder to chew. Either way Royal Bibingka still taste superb!
